Flour Tortilla Quiche
Ingredients: 12 AlbaLisa Par-baked Flour Tortillas, oil spray, 2 eggs, 1 cup of milk, salt and pepper,
Filling: your choice of cherry tomatos, basil, sauté mushrooms, jalapenos, black beans, bacon, ham, parmesan or cheddar cheese
Egg mix: Blend eggs, milk, salt and pepper and transfer to a pitcher or a measuring cup with a spout
Preheat oven @375. Grease a muffin tin lightly with spray oil. Place tortillas in each cup and fill it with your choice of vegetable, meat or cheese and egg mix. Bake for 10 minutes or until eggs cook.
Flour Tortilla Pizza
Place AlbaLisa Par-baked Flour Tortillas on a baking sheet. Put your favorite pizza sauce on (the thicker the better), then add fresh mozzarella cheese and roasted tomatos. Bake for 5 minutes @ 425. Once out of the oven, sprinkle abundantly with fresh basil. Or be creative choose your own toppings! Try an Indian Tortilla Pizza with curry vegetables or a Mexican Tortilla Pizza with black beans, sour cream and pickled jalapenos!
